The first symbol was the one in Gypsy's house, it was the Sacred Heart of Jesus. I think the significance of that is that you think a Gypsy is a strange individual that likes and does weird things, but she has a Sacred Heart of Jesus by her table. She has something that a catholic or christian would have in their room, this tells us that she isn't some ordinary Gypsy. Also the Sacred Heart of Jesus means that Jesus is giving his heart or love to the people. She did a deed for Santiago for free, so that's like she's giving him something. Its similar to what Jesus would do.
The second reference that i found is on page 29 when the old king said that God leaves omens for people to find. Its significance because in a way God leaves omens for all of us (if u look at from a religious point of view). The old man is saying this to the boy, but its like he's saying it to you. The boy will have to meet these omens, but we meet these omens everyday of our life and that's what puts us on the right path to our Personal Legend.
I agree with you, don't forget about him saying a prayer to protect himself. You pulled out a deeper meaning to the more subtle things like letting him go for free, i didn't catch on to those aspects.
